In addition to the subjects listed below, the University of Otago provides a large number of Genstat lessons and workshop videos using real-life data sets (which you can download from their site). Their presentations involve the analysis of sociological and ecological data, and covers methods such as multiple linear regression, principal component analysis and mixed model analysis.
StATS (Statistical Advisory and Training Service) have written comprehensive training manuals, which illustrate statistical methodology with an agricultural and environmental focus. An undergraduate knowledge of basic statistics is all you need to follow the manuals, which take you through design and analysis of experiments using Genstat.
